Colusa Corn Muffins
Makes 18 muffins
- 2/3 cup milk
- 1/3 cup butter or margarine, melted
- 1/2 cup honey
- 2 eggs
- 1-1/2 cups whole wheat flour
- 2/3 cup cornmeal
- 2-1/2 teaspoons baking powder
- 1/4 teaspoon salt
In small bowl, beat together milk, butter, honey and eggs. Set aside. In large bowl, stir together dry ingredients. Add honey mixture. Stir just enough to barely moisten flour. Do no overmix. Spoon batter into paper-lined or greased muffin pan cups. Bake in preheated oven at 350°F for 20 to 25 minutes. Serve warm.
Tip: Add a scoop of 100% ANY WHEY PROTEIN and just add a little more milk to add protein to the muffins!
